Smoky grilled coconut with a bright marinade — charred edges, juicy centre, and a squeeze of lime to finish. 22 minutes of mostly hands-off cooking.

Ingredients
- Salt1 tsp
- Garlic3 cloves, crushed
- Lime1, juiced
- Smoked Paprika1 tsp
- Coconut200 g, fresh
- Palm Oil2 tbsp
- Coarse Salt1 tbsp
- Farofato serve
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Whisk the Palm Oil, lime juice, garlic, smoked paprika and salt into a quick marinade.

Coat the coconut completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the coconut in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh cilantro and extra lime.
Chef's tip
Don't move the coconut for the first 3 minutes; a proper crust releases itself.
