Comfort food Brazilian-style: golden refogado, browned Pork, and a gentle simmer that ends spoon-coating and fragrant. Rice is mandatory.

Ingredients

  • Butter60 g
  • Saltto taste
  • Garlic4 cloves, minced
  • Bell Pepper1, sliced
  • Spring Onions3, cut into batons
  • Coconut Milk2 tbsp
  • Pork500 g
  • Smoked Paprika1 tsp
  • Palm Oil2 tbsp
  • Cassava Flour150 g

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Start a refogado: onion and garlic cooked slowly in oil until translucent and sweet.

    Brown the Pork in the pan, letting it take real colour.

  3. 3

    Add Palm Oil and Garlic, softening them into the base.

  4. 4

    Season, add liquid to come a third of the way up, and simmer covered until tender.

  5. 5

    Uncover and reduce until the sauce is spoon-coating and bright.

  6. 6

    Finish with coriander and lime, and serve hot with rice and beans.

Chef's tip

For deeper flavour, toast the smoked paprika in the oil before adding anything wet.
