Shrimp Farofa

High heat, big flavour: shrimp seared with aromatics and a shiny sauce that clings to every bite. Ready in 14 minutes including prep.

Ingredients
- Butter60 g
- Saltto taste
- Garlic4 cloves, minced
- Bell Pepper1, sliced
- Spring Onions3, cut into batons
- Coconut Milk2 tbsp
- Shrimp400 g
- Smoked Paprika1 tsp
- Palm Oil2 tbsp
- Cassava Flour150 g
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Start a refogado: onion and garlic cooked slowly in oil until translucent and sweet.

Brown the Shrimp in the pan, letting it take real colour.

Add Palm Oil and Garlic, softening them into the base.
- 4
Season, add liquid to come a third of the way up, and simmer covered until tender.

Uncover and reduce until the sauce is spoon-coating and bright.

Finish with coriander and lime, and serve hot with rice and beans.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
