A clear, restorative brazilian soup starring hearts of palm — light on the palate, big on aroma. 30 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Fresh Cilantrosmall handful
- Potato3
- Stock or Broth1 litre
- Smoked Paprika1/2 tsp
- Palm Oil1 tbsp
- Brazilian Sausage150 g
- Collard Greens200 g, shredded
- Hearts of Palm300 g
Instructions

Sweat the onion in the Palm Oil until translucent but not browned, about 5 minutes.

Add the garlic and smoked paprika and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the hearts of palm.

Simmer gently until the hearts of palm is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh cilantro and a grind of black pepper.
Chef's tip
For deeper flavour, toast the smoked paprika in the oil before adding anything wet.
