Coconut Caldo Verde

Gentle simmered coconut in a fragrant broth, finished with fresh herbs — the brazilian answer to "something light tonight". About 30 minutes from fridge to table.

Ingredients

  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Fresh Cilantrosmall handful
  • Potato3
  • Stock or Broth1 litre
  • Smoked Paprika1/2 tsp
  • Coconut200 g, fresh
  • Palm Oil1 tbsp
  • Brazilian Sausage150 g
  • Collard Greens200 g, shredded

Instructions

    Sweat the onion in the Palm Oil until translucent but not browned, about 5 minutes.

    Add the garlic and smoked paprika and cook for 30 seconds more.

    Pour in the stock, bring to a simmer, and add the coconut.

  4. 4

    Simmer gently until the coconut is just cooked through and the broth tastes rounded.

  5. 5

    Ladle into warm bowls and top each with fresh cilantro and a grind of black pepper.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
