Chicken Harira

Gentle simmered chicken in a fragrant broth, finished with fresh herbs — the moroccan answer to "something light tonight". About 40 minutes from fridge to table.

Ingredients

  • Chicken500 g, thighs
  • Tomato Puree300 ml
  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Chickpeas200 g
  • Fresh Cilantrosmall handful
  • Olive Oil1 tbsp
  • Lentils150 g
  • Stock or Broth1 litre
  • Vermicelli80 g
  • Ras el Hanout1/2 tsp

Instructions

    Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

    Add the garlic and ras el hanout and cook for 30 seconds more.

  3. 3

    Pour in the stock, bring to a simmer, and add the chicken.

  4. 4

    Simmer gently until the chicken is just cooked through and the broth tastes rounded.

  5. 5

    Ladle into warm bowls and top each with fresh cilantro and a grind of black pepper.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
