Ground Beef Harira
Gentle simmered ground beef in a fragrant broth, finished with fresh herbs — the moroccan answer to "something light tonight". About 40 minutes from fridge to table.
Ingredients
- Tomato Puree300 ml
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Chickpeas200 g
- Fresh Cilantrosmall handful
- Olive Oil1 tbsp
- Ground Beef450 g
- Lentils150 g
- Stock or Broth1 litre
- Vermicelli80 g
- Ras el Hanout1/2 tsp
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and ras el hanout and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the ground beef.

Simmer gently until the ground beef is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh cilantro and a grind of black pepper.
Chef's tip
For deeper flavour, toast the ras el hanout in the oil before adding anything wet.
