A creamy, swooshable moroccan dip built around eggs — built for torn bread and long evenings. 15 minutes of mostly hands-off cooking.

Ingredients

  • Saltto taste
  • Garlic2 cloves, grated
  • Lemon1/2, juiced
  • Olive Oil3 tbsp, good and fruity
  • Eggs6
  • Ground Cumin1 tsp
  • Fava Beans300 g
  • Ras el Hanout1/2 tsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Prepare the eggs — roast, boil or mash it depending on what it is, until completely soft.

    Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

    Season with the garlic, lemon juice, ras el hanout and salt — taste as you go.

    Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh cilantro, and serve with warm bread.

Chef's tip

Taste and adjust the salt at the end; sauces concentrate as they reduce.
