Little savoury cakes of lentils, golden outside and tender within — great hot or cold. Ready in 35 minutes including prep.

Ingredients
- Onion1 small, grated
- Olive Oil3 tbsp, for frying
- Eggs1, beaten
- Ground Cumin1 tsp
- Paprika1 tsp
- Fresh Parsley1 handful
- Lentils250 g
- Breadcrumbs80 g
- Ras el Hanout1 tsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Chop or mash the lentils finely, then mix with the breadcrumbs, egg, grated onion and ras el hanout.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Olive Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh cilantro and wedges of lemon.
