Pumpkin Kefta

Crisp-edged patties of pumpkin with a soft heart — pan-fried and made for dipping. About 22 minutes from fridge to table.

Ingredients

  • Onion1 small, grated
  • Olive Oil3 tbsp, for frying
  • Eggs1, beaten
  • Ground Cumin1 tsp
  • Paprika1 tsp
  • Fresh Parsley1 handful
  • Pumpkin500 g
  • Breadcrumbs80 g
  • Ras el Hanout1 tsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Chop or mash the pumpkin finely, then mix with the breadcrumbs, egg, grated onion and ras el hanout.

    Season generously, then shape into 8 small patties with wet hands.

    Chill for 15 minutes so they hold their shape in the pan.

    Shallow-fry in the Olive Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

    Drain briefly and serve with yogurt, fresh cilantro and wedges of lemon.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
