Fennel Kefta

Crisp-edged patties of fennel with a soft heart — pan-fried and made for dipping. 22 minutes of mostly hands-off cooking.

Ingredients

  • Onion1 small, grated
  • Olive Oil3 tbsp, for frying
  • Eggs1, beaten
  • Ground Cumin1 tsp
  • Paprika1 tsp
  • Fresh Parsley1 handful
  • Breadcrumbs80 g
  • Fennel2 bulbs
  • Ras el Hanout1 tsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Chop or mash the fennel finely, then mix with the breadcrumbs, egg, grated onion and ras el hanout.

    Season generously, then shape into 8 small patties with wet hands.

    Chill for 15 minutes so they hold their shape in the pan.

    Shallow-fry in the Olive Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

    Drain briefly and serve with yogurt, fresh cilantro and wedges of lemon.

Chef's tip

For deeper flavour, toast the ras el hanout in the oil before adding anything wet.
