Lentils Brochettes

Fire-kissed skewers of lentils — smoky outside, juicy inside, gone in minutes. 40 minutes of mostly hands-off cooking.

Ingredients

  • Yogurt3 tbsp
  • Garlic3 cloves, crushed
  • Bell Pepper1
  • Lemon1, juiced
  • Olive Oil2 tbsp
  • Red Onion1
  • Lentils250 g
  • Ras el Hanout1 tsp
  • Chermoula3 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Whisk the yogurt, olive oil, garlic, ras el hanout and lemon juice into a marinade.

    Cut the lentils into even 3 cm chunks and coat well; marinate 30 minutes minimum.

    Thread onto skewers with a little space between pieces so the heat can circulate.

    Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

  5. 5

    Slide off the skewers, rest 3 minutes, and dust with fresh cilantro.

Chef's tip

For deeper flavour, toast the ras el hanout in the oil before adding anything wet.
