Mechoui-style — slow-roasted ground beef with cumin salt, torn and shared. Ready in 32 minutes including prep.

Ingredients

  • Salt1 tsp
  • Garlic3 cloves, crushed
  • Lemon1, juiced
  • Olive Oil2 tbsp
  • Ground Beef450 g
  • Ground Cumin1 tbsp
  • Ras el Hanout1 tsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Whisk the Olive Oil, lemon juice, garlic, ras el hanout and salt into a quick marinade.

    Coat the ground beef completely and let it sit for at least 20 minutes (overnight is even better).

    Get the grill or griddle pan screaming hot.

  4. 4

    Grill the ground beef in a single layer, turning once, until charred in spots and cooked through.

  5. 5

    Rest for 5 minutes, then finish with fresh cilantro and extra lemon.

Chef's tip

Don't move the ground beef for the first 3 minutes; a proper crust releases itself.
