Mechoui-style — slow-roasted white fish with cumin salt, torn and shared. 19 minutes of mostly hands-off cooking.

Ingredients
- Salt1 tsp
- Garlic3 cloves, crushed
- Lemon1, juiced
- Olive Oil2 tbsp
- Ground Cumin1 tbsp
- White Fish500 g
- Ras el Hanout1 tsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Whisk the Olive Oil, lemon juice, garlic, ras el hanout and salt into a quick marinade.

Coat the white fish completely and let it sit for at least 20 minutes (overnight is even better).

Get the grill or griddle pan screaming hot.

Grill the white fish in a single layer, turning once, until charred in spots and cooked through.

Rest for 5 minutes, then finish with fresh cilantro and extra lemon.
Chef's tip
Don't move the white fish for the first 3 minutes; a proper crust releases itself.
