Lamb Liver Kebap

Marinated chunks of lamb liver on skewers, charred over high heat and showered with herbs. About 37 minutes from fridge to table.

Ingredients

  • Yogurt3 tbsp
  • Onion1
  • Garlic3 cloves, crushed
  • Bell Pepper2
  • Lemon1, juiced
  • Olive Oil2 tbsp
  • Urfa Pepper Flakes1 tsp
  • Lamb Liver400 g

Optional extras

  • Fresh Parsleyhandful, to finish

Instructions

    Whisk the yogurt, olive oil, garlic, urfa pepper flakes and lemon juice into a marinade.

    Cut the lamb liver into even 3 cm chunks and coat well; marinate 30 minutes minimum.

    Thread onto skewers with a little space between pieces so the heat can circulate.

    Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

    Slide off the skewers, rest 3 minutes, and dust with fresh parsley.

Chef's tip

For deeper flavour, toast the urfa pepper flakes in the oil before adding anything wet.
