Lamb Kofte

Crisp-edged patties of lamb with a soft heart — pan-fried and made for dipping. 32 minutes of mostly hands-off cooking.

Ingredients
- Onion1 small, grated
- Olive Oil3 tbsp, for frying
- Eggs1, beaten
- Fresh Parsley1 handful
- Lamb500 g, cubed
- Breadcrumbs80 g
- Bulgur100 g
- Urfa Pepper Flakes1 tsp
Instructions

Chop or mash the lamb finely, then mix with the breadcrumbs, egg, grated onion and urfa pepper flakes.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Olive Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh parsley and wedges of lemon.
Chef's tip
For deeper flavour, toast the urfa pepper flakes in the oil before adding anything wet.
