Crisp-edged patties of yogurt with a soft heart — pan-fried and made for dipping. 27 minutes of mostly hands-off cooking.

Ingredients
- Yogurt500 g
- Onion1 small, grated
- Olive Oil3 tbsp, for frying
- Eggs1, beaten
- Fresh Parsley1 handful
- Breadcrumbs80 g
- Bulgur100 g
- Urfa Pepper Flakes1 tsp
Instructions

Chop or mash the yogurt finely, then mix with the breadcrumbs, egg, grated onion and urfa pepper flakes.

Season generously, then shape into 8 small patties with wet hands.

Chill for 15 minutes so they hold their shape in the pan.

Shallow-fry in the Olive Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

Drain briefly and serve with yogurt, fresh parsley and wedges of lemon.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
