Hand-rolled gozleme — thin griddled flatbread stuffed with lamb liver. About 33 minutes from fridge to table.

Ingredients
- Yogurt4 tbsp
- Saltto taste
- Spinach200 g
- Tomato2, sliced
- Garlic2 cloves, minced
- Olive Oil1 tbsp
- All-Purpose Flour300 g
- Flatbread or Tortillas4
- Lettuce1/2, shredded
- Lamb Liver400 g
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Season the lamb liver with the garlic, salt and half the spices, then cook in the Olive Oil until browned and juicy.

Warm the flatbreads in a dry pan until soft and pliable, about 30 seconds a side.

Stir the yogurt with a pinch of salt and a squeeze of lemon for a quick sauce.

Pile the lamb liver onto each bread with lettuce, tomato and the yogurt sauce.

Roll tightly, wrap the bottom half in paper, and eat while the filling is still warm.
Chef's tip
For deeper flavour, toast the urfa pepper flakes in the oil before adding anything wet.
