A creamy, swooshable turkish dip built around lamb liver — built for torn bread and long evenings. 20 minutes of mostly hands-off cooking.

Ingredients
- Yogurt400 g
- Saltto taste
- Garlic2 cloves, grated
- Lemon1/2, juiced
- Olive Oil3 tbsp, good and fruity
- Cucumber2, grated
- Urfa Pepper Flakes1/2 tsp
- Lamb Liver400 g
- Dried Mint1 tsp
Optional extras
- Fresh Parsleyhandful, to finish
Instructions

Prepare the lamb liver — roast, boil or mash it depending on what it is, until completely soft.

Beat it smooth with the olive oil, adding it in a slow stream for a silky texture.

Season with the garlic, lemon juice, urfa pepper flakes and salt — taste as you go.

Swoosh onto a plate with a spoon-back of oil, a sprinkle of fresh parsley, and serve with warm bread.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
