A clear, restorative turkish soup starring lamb — light on the palate, big on aroma. 40 minutes of mostly hands-off cooking.

Ingredients

  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Lemon1
  • Olive Oil1 tbsp
  • Fresh Parsleysmall handful
  • Lamb500 g, cubed
  • Stock or Broth1 litre
  • Urfa Pepper Flakes1/2 tsp
  • Dried Mint1 tsp
  • Red Lentils150 g

Instructions

    Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

    Add the garlic and urfa pepper flakes and cook for 30 seconds more.

  3. 3

    Pour in the stock, bring to a simmer, and add the lamb.

  4. 4

    Simmer gently until the lamb is just cooked through and the broth tastes rounded.

  5. 5

    Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.

Chef's tip

For deeper flavour, toast the urfa pepper flakes in the oil before adding anything wet.
