Gentle simmered lentils in a fragrant broth, finished with fresh herbs — the turkish answer to "something light tonight". 43 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Lemon1
- Olive Oil1 tbsp
- Fresh Parsleysmall handful
- Lentils250 g
- Stock or Broth1 litre
- Urfa Pepper Flakes1/2 tsp
- Dried Mint1 tsp
- Red Lentils150 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the lentils.

Simmer gently until the lentils is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
