A clear, restorative turkish soup starring yogurt — light on the palate, big on aroma. About 35 minutes from fridge to table.

Ingredients
- Yogurt500 g
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Lemon1
- Olive Oil1 tbsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Urfa Pepper Flakes1/2 tsp
- Dried Mint1 tsp
- Red Lentils150 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the yogurt.

Simmer gently until the yogurt is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
