Gentle simmered okra in a fragrant broth, finished with fresh herbs — the turkish answer to "something light tonight". Ready in 30 minutes including prep.

Ingredients

  • Saltto taste
  • Onion1, diced
  • Garlic3 cloves, minced
  • Lemon1
  • Olive Oil1 tbsp
  • Fresh Parsleysmall handful
  • Okra400 g
  • Stock or Broth1 litre
  • Urfa Pepper Flakes1/2 tsp
  • Dried Mint1 tsp
  • Red Lentils150 g

Instructions

    Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

    Add the garlic and urfa pepper flakes and cook for 30 seconds more.

  3. 3

    Pour in the stock, bring to a simmer, and add the okra.

  4. 4

    Simmer gently until the okra is just cooked through and the broth tastes rounded.

    Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
