A clear, restorative turkish soup starring sea bass — light on the palate, big on aroma. Ready in 27 minutes including prep.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Lemon1
- Olive Oil1 tbsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Urfa Pepper Flakes1/2 tsp
- Sea Bass2 whole
- Dried Mint1 tsp
- Red Lentils150 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the sea bass.

Simmer gently until the sea bass is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
