A clear, restorative turkish soup starring lamb liver — light on the palate, big on aroma. Ready in 40 minutes including prep.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Lemon1
- Olive Oil1 tbsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Urfa Pepper Flakes1/2 tsp
- Lamb Liver400 g
- Dried Mint1 tsp
- Red Lentils150 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the lamb liver.

Simmer gently until the lamb liver is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
Chef's tip
A final squeeze of lemon just before serving lifts every other flavour.
