Ground Lamb Iskembe-Style Soup

Gentle simmered ground lamb in a fragrant broth, finished with fresh herbs — the turkish answer to "something light tonight". 40 minutes of mostly hands-off cooking.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Olive Oil1 tbsp
- Vinegar2 tbsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Ground Lamb450 g
- Urfa Pepper Flakes1/2 tsp
- Egg Yolk2
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the ground lamb.

Simmer gently until the ground lamb is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
