Gentle simmered zucchini in a fragrant broth, finished with fresh herbs — the turkish answer to "something light tonight". Ready in 30 minutes including prep.

Ingredients

- Onion1, diced
- Garlic3 cloves, minced
- Olive Oil1 tbsp
- Vinegar2 tbsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Zucchini3
- Urfa Pepper Flakes1/2 tsp
- Egg Yolk2
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the zucchini.

Simmer gently until the zucchini is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
