Spinach Iskembe-Style Soup

A clear, restorative turkish soup starring spinach — light on the palate, big on aroma. About 30 minutes from fridge to table.

Ingredients
- Saltto taste
- Spinach300 g
- Onion1, diced
- Garlic3 cloves, minced
- Olive Oil1 tbsp
- Vinegar2 tbsp
- Fresh Parsleysmall handful
- Stock or Broth1 litre
- Urfa Pepper Flakes1/2 tsp
- Egg Yolk2
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and urfa pepper flakes and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the spinach.

Simmer gently until the spinach is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh parsley and a grind of black pepper.
