Plant Based Taco Bowl

Seasoned ground beef over rice with black beans, corn, lettuce, tomato, cheese, salsa and sour cream. This plant based version swaps in cashews, soya chunks. Ready in about 35 minutes.

Ingredients

  • Tomato1, diced
  • Rice2 cups cooked
  • Taco Seasoning2 tbsp
  • Salsa1/2 cup
  • Soya Chunksrehydrated and minced, same weight
  • Lettuce2 cups, shredded
  • Black Beans1 can, drained
  • Corn1 cup

Optional extras

  • Lime1
  • Cashewsplant-based cheese or cashew cheese

Instructions

    For this plant based version, use soya chunks for ground beef, cashews for cheddar cheese, cashews for sour cream wherever the steps mention them.

    Brown the beef, drain excess fat and stir in taco seasoning with a splash of water.

    Warm the black beans and corn.

  4. 4

    Divide rice between bowls and top with beef, beans, corn, lettuce and tomato.

    Finish with cheese, salsa, sour cream and a squeeze of lime.
