Balinese Tofu Satay

Fire-kissed skewers of tofu — smoky outside, juicy inside, gone in minutes. 29 minutes of mostly hands-off cooking.

Ingredients
- Yogurt3 tbsp
- Tofu500 g, fried
- Lime1, juiced
- Shallots3 cloves, crushed
- Ground Coriander1 tsp
- Coconut Oil2 tbsp
- Sweet Soy Sauce2 tbsp
- Peanut Sauce200 ml
- Kecap Manis2 tbsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Whisk the yogurt, coconut oil, garlic, ground coriander and lime juice into a marinade.

Cut the tofu into even 3 cm chunks and coat well; marinate 30 minutes minimum.

Thread onto skewers with a little space between pieces so the heat can circulate.

Grill over high heat, turning every few minutes, until charred at the edges and cooked inside.

Slide off the skewers, rest 3 minutes, and dust with fresh cilantro.
Chef's tip
For deeper flavour, toast the ground coriander in the oil before adding anything wet.
