Water Spinach Mie Goreng

Springy noodles, tender water spinach and a savoury-sweet glaze, tossed together in minutes. Ready in 17 minutes including prep.

Ingredients

  • Saltto taste
  • Cabbage150 g
  • Spring Onions3, sliced
  • Shallots3 cloves, minced
  • Noodles250 g
  • Water Spinach400 g
  • Wheat Noodles300 g
  • Coconut Oil2 tbsp
  • Sweet Soy Sauce2 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Boil the noodles a minute shy of the packet time, drain, and toss with a splash of the Coconut Oil so they don't clump.

    Heat the rest of the Coconut Oil in a wok until it shimmers, then flash the garlic for a few seconds.

    Add the water spinach and cook until just done, then splash in the sweet soy sauce.

    Slide the noodles in and toss vigorously for 60 seconds so every strand picks up the sauce.

    Finish off the heat with spring onions and thai basil.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
