Fresh, zingy and full of texture: squid tossed with herbs and a sharp citrus dressing. About 15 minutes from fridge to table.

- Olive Oil3 tbsp

- Cabbage150 g
- Lime1, juiced
- Bean Sprouts150 g
- Squid400 g
- Peanut Sauce250 ml
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the squid — slice, shred or cube it so every forkful gets some.

Toss the squid with the garlic, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
Chef's tip
Taste and adjust the salt at the end; sauces concentrate as they reduce.
