Ingredients

- Fresh Cilantrohandful, torn
- Olive Oil3 tbsp
- Eggs2
- Cabbage150 g
- Lime1, juiced
- Bean Sprouts150 g
- Tempeh300 g
- Peanut Sauce250 ml
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the tempeh — slice, shred or cube it so every forkful gets some.

Toss the tempeh with the garlic, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.

A final squeeze of lime just before serving lifts every other flavour.
