
Water Spinach Gulai
Golden Padang-style gulai — water spinach in turmeric coconut gravy, fiery and fragrant. About 32 minutes from fridge to table.
Ingredients
- Saltto taste
- Garlic1 large, finely chopped
- Coconut Milk400 ml
- Shallots4 cloves, minced
- Ground Coriander1 tsp
- Water Spinach400 g
- Coconut Oil2 tbsp
- Galangal1/2 tsp
- Ground Turmeric1 tsp
- Sweet Soy Sauce400 g
- Gulai Paste3 tbsp
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Heat the Coconut Oil in a heavy-bottomed pot over medium heat until shimmering.

Add the garlic and cook until golden and softened, 6-8 minutes, stirring so it doesn't catch.

Stir in the shallots plus the ground coriander, ground turmeric and galangal; toast for about a minute until the kitchen smells incredible.

Add the water spinach, turning every piece through the spice base so it's fully coated, and sear lightly.

Pour in the sweet soy sauce, bring to a gentle bubble, then cover and simmer until the water spinach is tender.

Uncover and reduce until the sauce clings to a spoon. Finish with fresh cilantro and a squeeze of lime.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
