Shrimp Pepesan

Banana-leaf wrapped and steamed shrimp — pepesan, spice paste worked right in. About 22 minutes from fridge to table.

Ingredients

  • Ginger4 slices
  • Spring Onions3, shredded
  • Shrimp400 g
  • Shallots3 cloves, sliced
  • Banana Leaves6
  • Coconut Oil1 tbsp
  • Ground Turmeric1 tsp
  • Sweet Soy Sauce2 tbsp

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Set up a steamer over simmering water and line the tray with the ginger slices.

    Lay the shrimp in a single layer, scatter over the garlic, and season lightly.

    Steam until just cooked through — translucent and silky rather than dry.

    Transfer to a warm plate, pour over the sweet soy sauce, and top with spring onions.

    Heat the Coconut Oil until it just smokes and pour it sizzling over everything at the table.

Chef's tip

Let the dish rest 5 minutes off the heat before serving so the flavours settle.
