Water Spinach Perkedel

Crisp-edged patties of water spinach with a soft heart — pan-fried and made for dipping. 22 minutes of mostly hands-off cooking.

Ingredients

  • Garlic1 small, grated
  • Potato4, mashed
  • Eggs1, beaten
  • Breadcrumbs80 g
  • Ground Coriander1 tsp
  • Water Spinach400 g
  • Coconut Oil3 tbsp, for frying

Optional extras

  • Fresh Cilantrohandful, to finish

Instructions

    Chop or mash the water spinach finely, then mix with the breadcrumbs, egg, grated garlic and ground coriander.

    Season generously, then shape into 8 small patties with wet hands.

    Chill for 15 minutes so they hold their shape in the pan.

    Shallow-fry in the Coconut Oil over medium heat for 3-4 minutes a side until crusty and cooked through.

    Drain briefly and serve with yogurt, fresh cilantro and wedges of lime.

Chef's tip

For deeper flavour, toast the ground coriander in the oil before adding anything wet.
