
Mushrooms Kari
Tender mushrooms folded into a glossy, aromatic gravy — the kind of indonesian home cooking that gets requested again and again. 32 minutes of mostly hands-off cooking.
Ingredients
- Saltto taste
- Garlic1 large, finely chopped
- Potato3
- Mushrooms400 g
- Coconut Milk400 ml
- Shallots4 cloves, minced
- Ground Coriander1 tsp
- Coconut Oil2 tbsp
- Galangal1/2 tsp
- Curry Powder2 tbsp
- Ground Turmeric1 tsp
- Sweet Soy Sauce400 g
Optional extras
- Fresh Cilantrohandful, to finish
Instructions

Heat the Coconut Oil in a heavy-bottomed pot over medium heat until shimmering.

Add the garlic and cook until golden and softened, 6-8 minutes, stirring so it doesn't catch.

Stir in the shallots plus the ground coriander, ground turmeric and galangal; toast for about a minute until the kitchen smells incredible.

Add the mushrooms, turning every piece through the spice base so it's fully coated, and sear lightly.

Pour in the sweet soy sauce, bring to a gentle bubble, then cover and simmer until the mushrooms is tender.

Uncover and reduce until the sauce clings to a spoon. Finish with fresh cilantro and a squeeze of lime.
