Fresh, zingy and full of texture: water spinach tossed with herbs and a sharp citrus dressing. 15 minutes of mostly hands-off cooking.

Ingredients

- Fresh Cilantrohandful, torn
- Olive Oil3 tbsp
- Lime1, juiced
- Bean Sprouts150 g
- Water Spinach400 g
- Rice Cakes300 g
- Peanut Sauce200 ml
Instructions

Whisk the lime juice with the olive oil, salt and pepper for a bright, simple dressing.

Prepare the water spinach — slice, shred or cube it so every forkful gets some.

Toss the water spinach with the garlic, fresh cilantro and the dressing just before serving.

Let it sit 5 minutes so the flavours marry, then taste and add another squeeze of lime if it needs lift.
Chef's tip
Let the dish rest 5 minutes off the heat before serving so the flavours settle.
