Made from a properly fermented batter, this is the tiffin-house classic at its best: light, tangy and crisp in exactly the right places. About 25 minutes from fridge to table.

Ingredients

  • Yogurt1 cup
  • Baking Powder1/2 tsp
  • Rice Flour1/2 cup
  • Black Pepper1 tsp
  • Semolina (Rava)2 cups

Optional extras

  • Fresh Cilantrofor chutney
  • Coconutfor chutney

Instructions

    Stir the semolina (rava) with yogurt, salt, baking powder and water into a thick pouring batter; rest 15 minutes.

    Ladle onto a hot tawa and spread in a spiral; drizzle oil and cook 2-3 minutes until the edges lift and lace brown. Fold and serve.

    Serve hot with sambar and coconut-cilantro chutney.
