The south Indian breakfast that conquered the world — fermented batter, hot steam (or a singing tawa), and coconut chutney on the side. Gives you a proper meal in 40 minutes.

Ingredients
- Saltto taste
- Rice2 cups
- Urad Dal1/2 cup
- Fenugreek Seeds1 tsp
- Eggs2
Optional extras
- Fresh Cilantrofor chutney
- Coconutfor chutney
Instructions

Soak the rice, dal and fenugreek 6 hours, grind to a smooth batter with water, add salt, and ferment overnight until doubled and bubbly.

Ladle onto a hot tawa and spread in a spiral; drizzle oil and cook 2-3 minutes until the edges lift and lace brown. Fold and serve.

Serve hot with sambar and coconut-cilantro chutney.
