Jeera Rice
A one-bowl south Indian rice classic — rice folded through a mustard-and-curry-leaf tempering, made for lunchboxes and long train journeys alike. About 30 minutes from fridge to table.
Ingredients
- Saltto taste
- Cumin Seeds2 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Rice300 g, cooked and cooled
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Peanuts1/4 cup

- Fresh Cilantroto finish
Instructions

Cook the rice ahead and spread it to cool — day-old, cool grains fry and fold without breaking.

Heat ghee and pop the mustard seeds, then add the curry leaves and peanuts and fry to a light gold.

Stir in the seasoning and turmeric, cooking briefly so everything perfumes the fat.

Fold in the rice and salt over a gentle heat, tossing so every grain picks up the tempering.

Rest 2 minutes off the heat, finish with cilantro and serve warm.
Chef's tip
Cool rice before folding — hot rice turns mushy in the pan.
