Sabudana Khichdi
India's answer to a hug: soft-cooked rice and dal, tempered in ghee — the dish every grandmother prescribes and no one refuses. 40 minutes of mostly hands-off cooking.
Ingredients
- Saltto taste
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Rice1 cup, rinsed
- Potato1
- Yellow Lentils (Toor Dal)1/2 cup, rinsed
- Peanuts1/4 cup
Optional extras
- Fresh Cilantroto finish
Instructions

Rinse the rice and dal together until the water runs almost clear.

Heat ghee, crackle the cumin, then fry the sago (sabudana), and stir in the turmeric.

Add the rice and dal with 3 cups of water and salt; pressure-cook for 3 whistles.

Open, mash lightly — khichdi should be soft but not soup — and adjust the consistency.

Finish with a spoon of ghee and cilantro; serve with papad and pickle.
Chef's tip
Runnier is fine; add hot water a ladle at a time until it feels right.
