A dry, home-style sabzi where the two vegetables are cooked to complement — soft where one is firm, green where one is gold. 35 minutes of mostly hands-off cooking.

Ingredients

  • Garam Masala1/2 tsp
  • Saltto taste
  • Spinach200 g
  • Cumin Seeds1 tsp
  • Ghee2 tbsp
  • Turmeric Powder1/2 tsp
  • Yellow Lentils (Toor Dal)1 cup
  • Ground Coriander1 tsp
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantroto finish

Instructions

    Heat the ghee and crackle the cumin seeds.

    Add the harder vegetable first and sauté 3-4 minutes so it takes colour.

    Add the softer greens, the powdered spices and salt; toss to coat every piece.

    Cover and cook on a low flame 10-12 minutes, stirring once — no water needed if the lid stays on.

    Uncover, raise the heat for a minute to dry any liquid, and finish with cilantro.

Chef's tip

No water, covered pan — the vegetables steam in their own juices and taste of themselves.
