Aloo Methi
A dry, home-style sabzi where the two vegetables are cooked to complement — soft where one is firm, green where one is gold. Gives you a proper meal in 35 minutes.

- Saltto taste
- Cumin Seeds1 tsp
- Ghee2 tbsp

- Fresh Cilantroto finish
Instructions
- 1
Heat the ghee and crackle the cumin seeds.
- 2
Add the harder vegetable first and sauté 3-4 minutes so it takes colour.
- 3
Add the softer greens, the powdered spices and salt; toss to coat every piece.
- 4
Cover and cook on a low flame 10-12 minutes, stirring once — no water needed if the lid stays on.
- 5
Uncover, raise the heat for a minute to dry any liquid, and finish with cilantro.
Chef's tip
No water, covered pan — the vegetables steam in their own juices and taste of themselves.
