Gentle simmered clams in a fragrant broth, finished with fresh herbs — the italian answer to "something light tonight". Ready in 27 minutes including prep.

Ingredients
- Saltto taste
- Onion1, diced
- Garlic3 cloves, minced
- Fresh Basilsmall handful
- Olive Oil1 tbsp
- Dried Oregano1/2 tsp
- Stock or Broth1 litre
- Clams800 g, cleaned
- Pasta Shells80 g
Instructions

Sweat the onion in the Olive Oil until translucent but not browned, about 5 minutes.

Add the garlic and dried oregano and cook for 30 seconds more.

Pour in the stock, bring to a simmer, and add the clams.

Simmer gently until the clams is just cooked through and the broth tastes rounded.

Ladle into warm bowls and top each with fresh basil and a grind of black pepper.
Chef's tip
For deeper flavour, toast the dried oregano in the oil before adding anything wet.
