Ghee Roast Dosa Masala

A proper tiffin-plate ghee roast dosa masala — fermented batter, patient steam and the smell that fills every South Indian morning. Ready in 40 minutes including prep.

Ingredients

  • Saltto taste
  • Ghee3 tbsp
  • Rice2 cups
  • Fenugreek Seeds1/2 tsp
  • Potato3, spiced mash
  • Neutral Oil2 tbsp
  • Rice Flour1/4 cup

Optional extras

  • Fresh Cilantroto finish

Instructions

    Grind the soaked rice and dal to a smooth batter; ferment overnight for that tangy lift.

    Heat a cast-iron griddle until a drop of water dances; pour a ladle of batter and spread it thin.

    Drizzle oil or ghee around the edges and cook until the base turns lacy and golden.

  4. 4

    Flip, cook 30 seconds more, and fold onto the plate — crisp outside, soft within.

  5. 5

    Serve with sambar and coconut chutney.

Chef's tip

The batter should fall in ribbons — too thick and the ferment goes flat.
