Jowar Pongal: the ancient grain doing the everyday job, deliciously. About 35 minutes from fridge to table.

Ingredients

  • Onion1, chopped
  • Green Chili1
  • Ghee2 tbsp
  • Turmeric Powder1/2 tsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Sorghum (Jowar)1 cup

Instructions

    Rinse the millet and drain; a 20-minute soak shortens the cooking.

    Crackle the mustard seeds in ghee with the curry leaves and chili.

  3. 3

    Add the onion and cook to gold, then the millet, turmeric, salt and double its volume of water.

  4. 4

    Cook covered on low until the grains fluff and the water is gone, 12-15 minutes.

  5. 5

    Rest 5 minutes and fork through.

Chef's tip

Rinse millets well; a dusty grain dulls the whole pot.
