
Bangkok-Style Duck Fried Rice
A one-pot rice dish where duck perfumes the grains as they cook — weeknight-friendly and endlessly adaptable. About 40 minutes from fridge to table.
Ingredients
- Saltto taste
- Garlic1, finely chopped
- Rice300 g
- Eggs2
- Fish Sauce1 tbsp
- Stock or Broth600 ml
- Duck600 g, breast
- Coconut Oil2 tbsp
- Red Curry Paste1 tsp
- Jasmine Rice400 g
Optional extras
- Thai Basilhandful, to finish
Instructions

Rinse the rice until the water runs clear, then drain well.

Heat the Coconut Oil in a wide pot, soften the garlic, and bloom the red curry paste for 30 seconds.

Stir in the duck, then add the rice and turn everything gently through the fragrant oil.

Pour in the stock, bring to a boil, then clamp on a lid and cook on the lowest heat for 15 minutes without peeking.

Rest off the heat for 5 minutes, then fluff with a fork and crown with thai basil.
Chef's tip
Never lift the lid while the rice steams — trapped steam is doing the work.
