Daddojanam
Telugu curd rice tempered with ginger, the cooling end to any feast. One pot, big aroma — a full meal folded into fragrant rice. A bowl of plain yogurt and pickled onions is all it wants.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Saltto taste
- Onion1, thinly sliced
- Ginger2-inch piece
- Green Chili2, slit
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Whole Garam Masala Spices2 tsp
- Rice2 cups
- Curry Leaves2 sprigs
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions
- 1
Soak the rice for 20 minutes, then drain thoroughly — wet rice turns mushy.
- 2
Warm the ghee and drop in the whole spices; the moment they sizzle and perfume the kitchen, add the onions.
- 3
Cook the onions down till sweet and bronze, add the paste and spices, and fry till the oil gleams at the edges.
- 4
Add the yogurt and saute two minutes, then slide in the drained rice and turn gently to coat every grain in the masala.
- 5
Add salt and hot water, boil, then cover with a tight lid and a tawa underneath to stop scorching; steam till done and rest before serving.
Chef's tip
Never stir the pot once the lid goes on; that is how rice turns to paste.
