
Beans Usili
Tamil usili — dal crumble scrambled with green beans. Humble dal, done properly, beats most fancy curries. Serve with steamed rice and a spoon of ghee.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Mustard Seeds1 tsp
- Curry Leaves2 sprigs
- Yellow Lentils (Toor Dal)1 cup, rinsed
- Green Beans2 cups, trimmed
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Cook the yellow lentils (toor dal) in a generous amount of water with turmeric and salt, skimming the foam, until each grain surrenders.

Beat the dal with a wire whisk until silky, adding hot water to a pouring consistency.

Warm the ghee, drop in cumin and mustard seeds if using, and let them pop before the onions go in.

Fry tomato with the green beans until it collapses into the fat, then pour the whole thing over the simmering dal.

Finish with a second tiny tadka — ghee, red chili powder, poured sizzling over the top — and a shower of cilantro.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
